Shrimp Scampi with Spaghetti
Ingredients
2 T Olive Oil
4 t Garlic Butter (recipe follows)
16 Large Shrimp raw, cleaned
1 t Kosher Salt
½ t Black Pepper
¼ cup Dry White Wine
8 oz Spaghetti Noodles
2 T Parmesan Cheese
½ c Fresh Diced Tomato
2 T Fresh Chopped Parsley
Garlic Butter Ingredients
¼ cup Olive Oil
2 ounces Chopped Fresh Garlic
4 ounces Butter
¼ teaspoon Sugar
Pinch Kosher Salt
Directions
Fill a pot with water and set over high heat. And bring to a boil. Add spaghetti to boiling water and cook for 10 minutes.
While pasta is cooking heat a large pan over medium heat with the oil and garlic butter.
In a bowl toss shrimp with salt and pepper and set aside.
Meanwhile when garlic butter begins to sizzle add the shrimp to pan. Cook for about 2 minutes then turn over and add wine. Reduce heat to low
Let wine cook for 2 more minutes, add pasta and toss to coat in the sauce add in tomato, parsley, and cheese. Toss to combine.
Remove from heat and serve immediately.
Servings 4
Garlic Butter Directions
Heat oil and garlic to 145 degrees over medium high heat
Remove from heat and add butter, sugar and salt
Purée in a blender or with a hand-held blender
Place into refrigerator until needed
